Who loves meatballs? Try this one!
Cut the butternut squash in half long ways - remove seeds and place on a baking pan skin side up. Add a bit of water on the bottom and roast in oven at 350/375 for about 1 hour (depending on size ).
Remove the "squash meat" and place in a strainer. Allow to strain in the refrigerator for a good hour mixing from time to time.
Place "squash meat " in a bowl and add a good amount of honey, parmigiano cheese, bread crumbs, good pinch ground nutmeg, 1-2 eggs and salt / pepper. Mix well.
Roll bite size balls- pass through bread crumb.
Heat a good amount of vegetable oil and fry on all sides . Place on paper to absorb excess oil.
When serving top with some homemade cream cheese and chives or substitute cheese for yogurt ( season with salt/pepper).
