Whole Wheat Pizza, Fresh Dandelion, Pecorino and Parmigiano

Go to your local bakery and get a couple of balls of whole wheat pizza dough or bread dough if last alternative. I actually told the girl to give me plain pizza dough, but she screwed up..

For the sauce:

Splash of olive oil , and sauté 1 cut up onion till soft. Add a good amount of cut up fresh tomato ( about 10- 15 med sized).

Season with salt pepper and a good pinch of sugar . Reduce the sauce by 1/2 .Be sure to cook on high heat /stirring from time to time to help reduce  the sauce quicker. When its ready shut off flame .

Cut up ( very small) about 5 more med sized tomatoes and add to the sauce/ taste for seasonings.

( the raw tomato will give it a nice fresh touch ).Add some of your favorite olives if you're an olive fan.

The Dough:

Stretch the dough on a flat baking pan,  making a little broader all around - hitting the edges . Allow to rise ( about 1 hour in a warm spot)

At some point pre heat oven to 350. Once dough rises , prick a bit with a fork, and bake about 10 min . Remove and evenly place the tomato sauce on top , then some slices of fresh mozzarella and a drizzle of olive oil. Bake until golden brown or until preferred crunchy consistency .

Dandelion :

In a bowl, mix some cut up dandelion , season with olive oil, salt and pepper. Toss, top the pizza and shave some pecorino or parmigiano or both.
