Avocado Encrusted White Filet

In season or not we usually have avocados lying about. As crazy as this recipe sounds, it's a must try! 

Any white fish filet will do. For the avocado, place the meat in a large bowl add lots of lemon juice, salt/pepper and mash to smooth consistency. Add a good tablespoon (+/-) of flour and mix well. Put aside.

Simply saute a sliced onion with olive oil, until super soft. Add a good amount of capers, sliced olives and fresh cut tomato. Cook for about 10 minutes on medium heat stirring occasionally. Add a touch of butter (optional). Taste for seasonings and put aside.

Cut the fillets into medium pieces and season with salt/pepper on both sides . Flour one fillet at a time, repeat.

Then pass through bread crumbs. Repeat with remaining fillets.

Heat a good splash of vegetable oil and begin to fry fillets on both sides until golden and cooked through. Place on paper towel to help absorb any excess oil . When serving, place the filets over a bed of the caper,onion and tomato mix ( see main photo).
