Anyone have left over Amaranth ?
I was inspired by my dear friend Chef Luisa Fernandes.
If you have chicken , meat or fish left-overs, turn it into delicious !
- Cut some potato and red onion into small cubes and cook till soft. When just about ready , add a good amount of cut asparagus and continue to cook asparagus about 2 minutes. Allow to cool and put aside
- place the Amaranth in a large bowl, add the potato-onion-asparagus mixture , fresh chopped cilantro ( or parsley) , good amount of corn , olive oil , splash of balsamic and toss gently. Taste for seasonings.
If Salmon is not your thing, add what ever cooked meat or cooked seafood you desire.
