Saute some sliced onion with olive oil until super soft . Add ground beef and continue to cook until beef is cooked.
Add lots of fresh cut tomatoes. Should be about the same amount of tomatoes as ground beef. Season with salt, pepper, fresh basil and continue to cook on high to medium heat stirring occasionally until sauce reduces enough to your preferred thickness .Taste for seasonings.
Boil tortellini "al dente" in salted water, drain and add to sauce. Toss with fresh chopped parsley and a splash of olive oil.
