Old Fashion Tomato Sauce
You can never go wrong with home made tomato sauce.
Chop an onion( or a few garlic gloves) sauté with a good splash of olive oil till golden. Add lots of fresh cut tomatoes( enough to almost fill pot), salt, pepper, basil leaves and cook for 2 hours stirring occasionally.If need be, used a good quality crushed canned tomato.
If you want it to be even more tasty, add your favorite meats after adding tomatoes. This meat will "tomato stew" for a couple of hours and become super soft.
Chef note: When the sauce is ready serve it up many ways and could easily be portioned and frozen; with pasta, make Italian bread pizza, lasagna, add some carrots and cream for a tomato soup, saute some garlic in a separate frying pan and add mussels and seafood add some of this tomato sauce.
