Saute 1 chopped onion and 2 cut carrots till golden . Add about two cups of lentil and cover with water ( about 4 fingers above solids)
Add some salt and bay leaf ( 3 leaves ). Cover and boil on low heat or about 1hr/ 30 minutes until cooked .
Drain lentil and place on a flat plater to cool down - remove bay leaf.
Add some diced raw celery for some crunch, canned tuna(drained),lots of sliced basil and a good splash of olive oil . The tuna will flavor it up naturally. Experiment by add other preferred spices. Taste for seasonings.Serve over a bed of lettuce or with a tomato salad.
