Slice the squash into large rings about 1/2 inch or so and remove the seeds.
Place in a large bowl, add a good splash of olive oil and season with salt and pepper.Toss well.
Get the grill nice and hot and be sure to clean it before grilling.Grill the rings on both sides till cooked through-repeat and place in a large bowl. Add a good splash of olive oil ,balsamic vinegar salt and pepper. Allow to rest 10 minutes before serving to allow the natural juice to accumulate, mix again and taste for seasonings.
Serve as is or add some parmigiano cheese. If you want to fancy it up a but, place the ring in a nonstick frying pan and preak an egg in the center, cover and cook on low heat.
