In a large frying pan add a good splash of olive oil and simply sauté lots of onions till extra soft on low heat . Season with salt pepper and put aside.
Using the same frying pan, saute lots of thinly sliced zucchini pieces. Once zucchini is cooked to a super soft consistency add the onions again. Season with salt and pepper.
In a separate bowl , beat about a dozen eggs and season with chopped parsley , lots of pecorino cheese and a good dash of black pepper . Place the zucchini and onion mixture back on fire and add eggs. Stir gently during cooking time trying to keep the eggs somewhat large, not to scrambled and small.
Serve in bowls with toasts on the side or on top of some delicious toasted crusted bread to make bruschettas.
