Pass slices of italian bread through beaten eggs (as you would French toast) - use a non stick pan and brown on both sides till golden (use a splash of olive oil when pan frying NOT BUTTER). Put aside.
In a separate pan use a splash of olive oil and sauteed onions till very soft.Add sliced gaeta olives( pitted) and add about 5-7 beaten eggs. Season with salt / pepper and continue to cook as you would scrambled eggs.
Place cooked egg washed bread on a baking pan, top with scrambles eggs and then top with favorite cheese (mozzarella and white cheddar in this case).Place in an oven and top broil or bake until cheese melts.
When serving , place on serving dishes and top with arugula that is seasoned with olive oil salt/pepper.
