Separate the egg whites and beat until a small amount of foam begins to form-put aside.
Cut up lots of green onion,have already boiled beets handy and some grated white cheddar cheese.Put aside.
Slice the beets into small bite size,season with some salt / pepper and a little olive oil.Put aside.
Using a non stick frying pan, add a good splash of olive oil and pour the egg whites to cover the base of pan. Keep flame on low heat . Place beets , lots of grated white cheddar, scallions, season with salt / pepper and cover for about 4 minutes or until eggs seems cooked through.
Close the omelet by flipping one side using a spatula. When serving, cut in 1/2 to get that " SEXY LOOK". Top with some chopped green onion.
