Let's face it , we could all do without those extra calories when choosing to eat pancakes. Why not get your fruit and nuts in while you're at it!
For starters, make your favorite pancake mixture. Peel an apple remove seeds and purée . Add to pancake mixture and fold gently.
Begin to make your pancakes. I like to use olive oil instead of butter when frying. Use about 1/2 teaspoon per pancake.
Add dried cranberry, a mixture of sunflower seeds or other seeds you may have handy and a good mixture of nuts.Cook as you normally would a pancake flipping on both sides. Serve with sliced apples and maple syrup as shown in main photo.
